Ingredients

  • 2 eggs
  • 200 g almond flour
  • 2 handfuls of chocolate chips
  • 2 tsp organic vanilla extract
  • Pinch of sea salt
  • 50 g coconut oil melted

  • 180 g coconut sugar
  • 1 tsp baking soda

Instructions

Preheat your oven to 180°C and line a medium-sized ovenproof dish with greaseproof paper.

Mix all the wet ingredients in a large mixing bowl. Make sure that the eggs are at room temperature – this helps to prevent the coconut oil from re-solidifying once added.

Add salt, collagen powder and baking soda and mix well. Add in the almond flour gradually, stirring the mixture after each addition.

Pour the mixture into your ovenproof dish and add in a handful of the chocolate chips. Bake for 45 minutes.

Allow it to cool before slicing into 12 brownies, then tuck in.
