Festive Vegan Protein Pancakes Recipe

Ingredients

  • 64 g Garden of Life RAW Organic Vegan Protein Powder – Vanilla Chai flavour
  • 128 g self-raising flour
  • 235 ml unsweetened almond milk
  • 1 vegan egg replacement
  • Pinch of salt
  • 1 tsp Garden of Life RAW Extra Virgin Coconut Oil
  • Optional: cinnamon, nutmeg, blueberries, banana, apples, nuts, maple syrup, icing sugar

Instructions

1.

Mix flax egg and almond milk in a small bowl.

In a larger bowl, mix the vanilla chai plant-based protein powder, flour and salt until combined. Mix in the wet ingredients.

3.

Feel free to add other festive ingredients, like cinnamon, nutmeg, nuts, apples, cinnamon, etc. Whatever you and your family enjoy!

4.

In a pan or skillet over a low to medium heat, melt some coconut oil to cover the base.

5.

Pour in your batter, wait for it to bubble on the edges (approx. 3 minutes) and flip. Cook for a further 2 minutes.

6.

Add to your plate and top with maple syrup, fruits or a covering of icing sugar for a snowy Christmas scene. Enjoy!
